Lemongrass in ice cream?

When I think of lemongrass, the only thing that instantaneously comes to my mind is Tom Yum Soup. I am not exactly a fan of lemongrass and it has never cross my mind that to use it to make some ice cream. However at the insistence of LoST I decided it to give it a try.

We basically infused some lemongrass and pandan leaves with the hot custard base for a few hours.  The result was surprisingly good. It was refreshing and not too sweet. But I thought the lemongrass and pandan flavor were a tad too light. It can be more intense. We would probably have to research further to improve the infusion method.

If you are looking a light ice cream to complement your heavy dinner, this would be an ideal choice. In fact I am thinking, maybe we can pair this ice cream with some decadent chocolate lava cake.

Tasting session

This was supposed to be posted like 3 weeks back. But with the end of my leave, work piling get my drift. Anyway I’m yanking this out of the proverbial blog cemetery as that would be a great injustice to the people who made an effort on a cold rainy weekend to volunteer as guinea pigs. A big thanks to all of you who dropped by, the feedback was invaluable and thanks for eating a good part of the ice cream else it would have ended up either in the bin or form part of the statistic in my next health report.

Whiter than thou

So after blogging about finding uses for the leftover eggwhites, the Chief Craftsman and myself got our hands dirty in the kitchen in trying to whip up something decent with the egg whites. After scouring various websites and youtube, we settled on making macarons based on this video.

We should have heeded the advice of the top comment for this video; “Easy to make my ass”. Needless to say, this was one for the failed experiment category.

Sticking to our french pastry theme, we next experimented with meringue. While not as complicated as making macarons, it still requires a a fair bit of delicate balance in getting the timing right, from whipping the egg whites, adding the heap load of sugar, right down to the baking time of these fluffy white cookies. As you can see from the picture, we left the cookies in the oven for a minute too long and it came out with a fake tan like those spotted by the chiseled abs Abercrombie and Fitch models. Looks aside, the cookies turned out surprisingly good. Crispy on the outside and light on the inside, it tasted good except for the fact that it is cloyingly sweet.  Perhaps if we can find a way to tone down sugar required to make these cookies, we may consider making it a regular feature in our lineup.

Till then, I’ll just use the whites as face mask.
